Low Carb Spinach Lasagna

Ingredients:

1lb ground beef or turkey
1/2 cup onion, chopped
1 teaspoon garlic powder
1 teaspoon salt
24 oz organic spaghetti sauce
6 oz goat cheese or 8oz fat free cream cheese
1 egg
10 oz fresh spinach, chopped
4 oz fat free mozzarella cheese, shredded
2 oz parmesan cheese, shredded

Directions:

Brown the ground beef or turkey with the onion and drain off the fat. Mix in the garlic powder and spaghetti sauce; season to taste and heat until bubbly. Meanwhile, soften the cream cheese or goat cheese in a large bowl. Add 1 egg, chopped spinach, salt and pepper then stir until creamy. Spread half of the meat mixture evenly in the bottom of a greased, 8 x 8″ baking pan. Spread the spinach mixture over the meat; top with the mozzarella, then the rest of the meat. Sprinkle with parmesan cheese. Bake at 375º for 30-40 minutes until hot and bubbly. Let stand 10 minutes before serving.
